Preheat oven to 375°F.
In a small bowl, mix together olive oil, cumin, paprika, coriander, cinnamon, salt, and black pepper to create a spice rub.
Rub the spice mixture all over the chicken, making sure to coat it evenly.
Stuff the cavity of the chicken with lemon slices, onion slices, and minced garlic.
Place the chicken in a roasting pan and pour chicken broth into the bottom of the pan.
Roast the chicken in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F.
Let the chicken rest for about 10 minutes before carving and serving.
